Rice, a key sushi ingredient, is Japan’s most important crop. In fact, thousands of years ago rice was used as currency in Japan.
For excellent Japanese takeaway etiquette, never leave your chopsticks sticking vertically into rice. To the Japanese, this resembles incense sticks which are placed vertically in the sand during offerings to the dead and is extremely bad luck.
Simmilarly, the Japanese would never pass food from one pair of chopsticks to another, as this recalls the passing of bones at a funeral. Instead, move it from one plate to another.
In Japan, it is considered very bad manners to bite chopsticks or use them to spear food.
When using soy sauce on your nigiri, dip it fish-side down as you only want to add flavour to the fish, not the rice.
It’s customary to eat your sushi in one bite, making it the ultimate party food. However, if it’s a bigger roll, it is okay to take it in two. Just don’t put it back down on the plate in between bites.
It is considered a great compliment to the chef to clean your plate, including the last grains of rice, giving you permission to stuff yourself!
