The light coconut broth overflows with galangal (Kha, or Thai ginger) flavour. Galangal is deeply aromatic and less spicy than its cousin, root ginger.

Thai’s will eat this light soup as a main course with rice, but most Europeans will order it as a soup starter to compliment their takeaway.
